Wild Pastis

Corsican maquis pastis — 46.3% ABV — 50 cl

Our pastis revives the spirit of the first anise drinks, when their character came from the plants and the place where they were gathered.

At the end of summer, we hand-harvest ripe wild fennel and pair it with maquis plants, blending anise freshness, wild herbs and floral notes. Each harvest is macerated, then distilled over a wood fire, before being rounded with a touch of honey from our bees. With no artificial anethole extract, our pastis lets the plants naturally express the full richness of their aromas.

This summer 2026 harvest is bottled at 46.3% ABV, with no artificial flavouring and no filtration. Its aromas and texture come solely from the plants we harvest.

This bottle comes from the 2026 vintage, finished in an acacia quarter cask of less than 125 litres to preserve the full aromatic richness of the harvest. Shake gently before serving and store away from heat and light.
