It all begins with the harvest. Guided through the maquis and our permaculture agroforestry orchards, you learn to recognize wild juniper berries, myrtle, mastic tree, and heirloom citrus that will make up your aromatic signature. It is as much a time of observation as of gathering, where you come to understand that each landscape gives a different flavor depending on the season.

Next comes the distillation itself, over a wood fire, following the method we developed from father to son. Here Noé shares the secrets of a precise yet never rigid craft: temperature, cutting the heart of the run, choice of botanicals — everything is decided by nose and instinct as much as by technique. You leave with your own unique elixir, and an intimate understanding of what unfolds between the landscape and the glass.

This stay is particularly well suited to those with two to three days on site, time to experience each stage without being rushed by the clock. From Paris or Nice, a flight to Calvi is all it takes: from there, just 25 minutes by road brings you to the estate, to step fully into the intimacy of the maquis, far from any bustle.
